The Cracker Barrel Chicken n Dumplings
made my life! This meal is a top five favorite for me and until now I have lived close enough to a Cracker Barrel that I haven’t bothered to attempt to make it myself. I had high expectations and I am happy to say they were met. Trevor said I made noises as I ate. I don’t regret a thing. I even went out on a limb and attempted the dumplings with cup for cup GF flour and it was a big win.
I have included some ideas for your Christmas Dinner as well. You will notice that it is very similar to the Thanksgiving dinner but I traded a pie and a casserole dish. We had ham for Thanksgiving as well hence the likeness. I never get tired of ham and funeral potatoes.

*Grilled Cheese Sandwiches/Tomato Soup
*Ranch Chicken Strips/ *Roasted Sweet Potatoes (GF)/ Cottage Cheese (GF)
*Spicy Sausage Pasta (GF noodles)
I usually use roasted chicken from Costco or put a couple breasts in the slow cooker with some salsa, garlic, and onion. You could use taco seasoning as well.
You need sauce, toppings of your choice and flat pita bread. Make your own personal pizzas and pop them in the oven at 400 degrees until your cheese is melty. Yum!
*French Bread Rolls (recipe below)
2 packages of whole mushrooms
8 oz cream cheese
1 package Ground Italian Sausage (jimmy dean)
1/2 tsp oregano
1/4 tsp ground red pepper (optional)
1/2 tsp garlic salt
1/2 cup parmesan cheese
Stem and core mushrooms.Crease a cookie sheet and set oven for 350 degrees. Cook sausage with spices and then drain. mix in softened cream cheese with an egg and Parmesan. Spoon heaping amounts into each mushroom and bake for 20 minutes. Note: you may need to take mushrooms out half way through and soak up some of the liquid in the pan.
Darby’s French Bread
Preheat oven to 400 degrees
2 C warm water
1 TB yeast
1 1/2 tsp salt
2 TB sugar(i use brown)
2 TB oil
about 3 1/2-4 cups flour-until not sticky
Knead at least 10 minutes and let raise 1/2 hour. form into roll and put in the pan with some space in between. Let raise for 10-15 minutes. Bake 10 minutes or until tops are golden.
