We had some serious winners last meal planning period! Some new family favorites from the last post were the Gluten Free German Pancakes (recipe below), Chicken Soup, Asian Chicken Cranberry Salad, and Gluten Free Buttermilk Biscuits
I am so excited for Thanksgiving I can hardly stand it. Some of my very favorite foods all in one day! I have spent so much time meal planning for that ONE day, that I haven’t been as invested in meal planning for the next two weeks! But, that does not mean I am not looking forward to some of the dinners I have listed below. You will notice I am going easy on the meat this time. There are more simple and meatless dishes than usual in efforts to save some money… due to the money we throw down to put together Thanksgiving. Meat is pricey so potatoes and beans it is!

B4D -*Gluten Free German Pancakes / Turkey Sausage Patties
Yes this was on my last meal plan. We loved it so much we wanted to eat it again. I found this recipe from Tara Thueson’s Gluten Snob Instagram. I add some vanilla to the batter.
1/4 C salted butter 1 C Pamela’s Gluten Free Flour (or an all purpose flour)
1 C Milk 6 Eggs
Place butter in a 9×13 glass baking dish. Place in oven and preheat to 350 degrees. Add remaining ingredients to blender and blend until smooth. Once butter is melted pour batter into the pan and bake for 30-40 minutes. You know it is done when the edges are browned and it doesn’t jiggle when the pan is moved. We serve ours with peanut butter, jelly, or syrup.

Walmart’s Great Value brand just came out with canned gluten free cream of mushroom soup so I am going to give it a test run with this dish.
Loaded Chicken and Potatoes Casserole / Cranberry Almond Spinach Salad
I usually add about a half cup of greek yogurt to the casserole to add some creaminess.
Caprese Lasagna Roll Ups / Steamed Carrots
Gluten Free Note: use GF lasagna noodles
*Chicken Salad w/ Crackers, Lettuce Wraps, or Tortilla Chips
Guiltless Chicken Salad-Taken from the cookbook 400 Calories or Less with Our Best Bites
4 oz shredded shicken (about 1 cup) 1/4 c diced celery
1 Tbsp sour cream or greek yogurt 1/2-1 tbsp parsley
2 tbsp sliced green onion 1/8 tsp curry powder
1/4 c diced apple 1/2 tsp red wine vinegar
1 tbsp mayonnaise 2 tbsp sliced almonds
salt and pepper to taste

Gluten Free Popovers
Fat Free Sugar Free Hot Chocolate Mix or Easy Homemade Hot Chocolate Mix
I have been a hot chocolate maniac with this pregnancy. However, there is a lot of sugar in the packets and extra junk in the fat free packets. I decided I would try my own. I plan to use Stevia as a substitute for the sugar.
*Holiday Egg Nog Custard Pie
This is a family favorite. We usually always have it at Thanksgiving and Christmas but I am toning it down this year-because pregnancy is exhausting- with how many pies we will have at Thanksgiving so instead I will bring this one to our church pie party. Win win! I use the Best Gluten Free Pie Crust and my family cannot even tell the difference.
Love this list! We do chicken salad lettuce wraps a lot in our house too! We live up the road from Sam’s Club and I’ll get a $4.99 Rotisserie Chicken and use it for one night dinner with veggies then the next night as chicken salad and this time of year I’ll use the bones too to make broth for chicken soup! Best $4.99 ever!

Yessss we love our $5 rotisserie chicken!! I feel a bit silly, but it has never occurred to me to just eat the chicken! I always buy it to shred it for other meals, but it IS delicious just by itself!

I LOOOOVE this chicken salad recipe! I always add a bit more vinegar, sometimes pickles, and I put in shredded cheese!

The zucchini meatballs with spaghetti and cauliflower breadsticks sound so amazing, especially since it is getting cooler out! I definitely can’t wait to check those out! Thanks for the suggestion!
